BBQ CHICKEN SALAD INGREDIENTS:
For the chicken:
- 3/4 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chili powder
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
For the salad:
- 8 cups chopped romain lettuce
- 15 ounces canned black beans (drained)
- 2 roma tomatoes
- 1 1/2 cups corn
- 1/4 chopped red onion
- 1 cup shredded mozzarella cheese
- 1 avocado sliced
- 1 cup tortilla strips
For the dressing:
3/4 cup ranch dressing
1/4 cup BBQ sauce
INSTRUCTIONS
- Combine the salt, onion powder, garlic powder, smoked paprika, and chili powder in a small dish. Then, sprinkle the seasoning over the chicken.
- Grill the chicken or cook in a skillet with olive oil over medium heat. Once heated, add in the chicken and cook for a few minutes per side until cooked through.
- Place lettuce in a large bowl.
